Task

  1. Clean the grill between cooking red meat, poultry and fish
  2. Regularly clean and sanitise all preparation surfaces
  3. Clean the meat and cheese slices after each use
  4. Regularly clean all dishes, cookware and utensils
  5. Regularly clean and sanitise cutting boards
  6. Empty waste bins and sanitise

Essential cleaning at the end of a cooking shift

Task

  1. Clean the fryers
  2. Brush the grill and clean out grease traps
  3. Clean hobs, griddles and stoves
  4. Clean and sanitise all preparation surfaces
  5. Clean and sanitise all cutting boards
  6. Empty and clean the steam table
  7. Clean the meat and cheese slicer
  8. Clean the kitchen floor
  9. Clean the freezer and walk-in refrigerator
  10. Sanitise the telephone
  11. Clean, descale and sanitise all sinks
  12. Put all aprons and chefs work wear into the laundry

Daily rotation kitchen cleaning

The following activities could be spaced throughout the week and represent a deeper clean than would ordinarily be undertaken on a daily basis.

Monthly Cleaning Checklist

Task

  1. Wash kitchen walls and storage areas
  2. Clean and sanitise refrigerators and freezers
  3. Empty and sanitise the ice machine
  4. Clean cooker hood and filters

Front of house and guest areas

Reception areas and guest areas

Task

  1. Clean entrance matting
  2. Clean all glass and mirrors
  3. Vacuum all carpets and soft furnishings
  4. Dust all surfaces of chairs, tables and other furniture
  5. Vacuum or sweep all hard floors
  6. Mop all hard floors
  7. Sanitize the telephone
  8. Remove cobwebs from entrance and surrounding areas
  9. Remove marks from around light switches and door frames
  10. Dust and polish window sills and ledges
  11. Spot clean walls and painted surface
  12. Polish all brass and bright work (including strip on entrance floor)

Lounges, conference rooms, meeting rooms

Task

  1. Clean all glass
  2. Vacuum carpet areas (if present)
  3. Clean entrance matting (if present)
  4. Vacuum or sweep all hard floors
  5. Mop all hard floors
  6. Dust all surfaces of  chairs, tables and other furniture
  7. Damp wipe all hard surfaces
  8. Dust any equipment
  9. Remove cobwebs from ceilings
  10. Remove marks from around light switches and door frames
  11. Dust and polish window sills and ledges
  12. Spot clean walls and painted surface
  13. Polish all brass and bright work (including strip on entrance floor)
  14. Remove rubbish and replace bin liners

Lifts and Stairs

Task

  1. Polish all brass and bright work (including strip on entrance floor)
  2. Clean all lift glass
  3. Vacuum or sweep all hard floors
  4. Mop all hard floors
  5. Damp wipe all hard surfaces

Washrooms

This washroom checklist is intended as a daily washroom maintenance schedule.

Task

  1. Clean and sanitise all sinks
  2. Clean and sanistise walls, doors, overflow and outlet pipes
  3. Clean the toilet
  4. Clean the urinal (if present)
  5. Clean all glass
  6. Wet mop the washroom floor
  7. Empty, clean and sanitise waste bins
  8. Top-up toilet tissue and hand towel dispensers
